Day 26 of being gluten-free

Before this detox, I would go to Veggie Grill at 23rd street every Friday to buy one of my favorite vegan sandwiches, a side dish, and their carrot cake. On day 26 it marked the 4 Friday of this challenge and I studied their menu to see what can I create to make it close to the Dr. Sebi recommended guidelines and keep it gluten-free.

I ordered the Pesto Zucchini Noodles. It is gluten-free and I did a swap out from the Italian sausage crumbles and used wild rice instead. This dish is lightly seared zucchini noodles in basil pesto with arugula, vegan Parmesan, and roasted baby tomatoes. Now keep in mind that baby tomatoes are not recommended tomatoes from the Dr. Sebi list, now is the vegan Parmesan. However, I felt good about ordering this dish. I honestly was going to order the gluten-free burger, but I really wanted be at close to how I eat at home and to be open-minded to ordering healthier food.

If I had to be honest, this dish was ok. I really like the pesto but it wasn’t enough sauce for me. It also need some more salt on the zucchini noodles. I personally was not a fan of the arugula, but there were moments of this meal, were the favors would come together. The wild rice, didn’t look or taste like wild rice to me and I was hoping I received what I requested. The best parts of the dish was the tomatoes and the Parmesan. If I was detoxing, I would order this dish again, but only for detoxing. This is not the type of meal that made me look forward to my weekly run to Veggie Grill. Even though this was not favorite item from this place, it felt great to have takeout plus making a better choice for my health. I will be trying all of their gluten-free dishes throughout the year.
