Day 27 of being gluten-free

The 27th day of this challenge fell on a Saturday. This is the time of a week for me that I like to binge on Star Wars movies (or cartoons) and food. Now granted that this would be my 4th Saturday on the challenge, old habits die hard. I just wanted some snacks, crackers and vegan cream cheese to be exact. It didn’t help that I wante to throw in the towel of this challenge from the beginning of the 4th week.

I headed to Whole Foods and for about 15 minutes I searched for the healthiest option of snacks that would give me a satisfying feeling that came close to crackers and cream cheese. I stumbled on these “Everything Zucchini” veggie flat from Brads Bucks Country, USA. It was not Dr. Sebi approved, but it was gluten-free, keto friendly, full of fiber and protein. It also had no grains, flours, or starches, the entire bag had 360 calories. My only main concern with this snack was the amount of sodium which was 550mg or 24% of the recommended daily consumption. The Dr. Sebi recommended ingredients that were in this product was zucchini, garbanzo beans, red bell pepper, sesame seeds, minced onions, and Himalayan Salt. The ingredients that were not classified as alkaline that were in this product were pumpkin seeds, carrots, flax seeds, sunflower seeds, Apple cider vinegar, lemon juice, poppy seeds, chia seeds, and garlic powder.

I really loved the taste of this “cracker.” It opened my eyes to what is possible to eat when I start forming my new normal once this challenge is over. I honestly would love to create an alkaline version of this in the future. However, if I am experiencing an urge to consume junk food, I can see myself buying this again. I also purchased an oil-free original hummus to go with this. This was also not completely Dr. Sebi approved, but it was closer than my favorite vegan cream cheese product. The approved ingredients in this hummus was garbanzo beans, tahini, Celtic sea salt. The ingredients that was not approved were, lemon juice, wheat-free tamari, distilled white vinegar, garlic, cumin, black pepper, and acacia. I really enjoyed this hummus as well, but if I could do the evening again, I would have made the hummus homemade using Dr. Sebi ingredients. I didn’t realize that this hummus contained soy. Plus it is cheaper to make hummus from scratch.

My dinner was pan-fried oyster mushrooms and harmless harvest coconut water (which is my favorite coconut water.) I wanted to feel “normal” and the snacks in combination of oysters mushrooms hit the spot. It curved my need to quit or cheat, and I found new and healthier snack to use in the future. When I started this challenge, I was not looking to be perfect, but be more intentional with my food choices. The fourth week of this challenge was the closest to how I really ate in my everyday life. It not planned, but it reflected on who I am when I am not detoxing. Mentally this was the hardest week for me, but I am very grateful that I pushed through and stayed committed to this challenge.
