Week 2 of 52 of the “Change your life in one year” challenge

In week two of the challenge, I was less focused than in week one, but I had a great weigh-in. I lost 5.2 pounds, which was better than expected, and I have a personal goal to lose 1-2 pounds weekly.  I still craved processed food, and I satisfied my urge for junk food by making a delicious vegan fried chicken sandwich using oyster mushrooms, tomatoes, avocado, and spelt bread. That sandwich was delicious, and I will be making that my go-to meal when I long for junk food. Although I didn't feel motivated to journal or eat foods recommended by Dr. Sebi this week, the weight loss progress kept me from giving up or binge eating.

For the #trysomethingnewtuesday week's meal, I made the “Creamy Mushroom Soup”  by Thai Cruz. This recipe can be found on page 89 and is worth trying out. It was so rich and so creamy. I did add double the seasoning because it made double the amount from the book. I think I got about nine servings at 1 1/2 cups per serving, and I cannot figure out if I did something wrong or if she had a more significant portion than me. I put the extra serving in the freezer and more likely eat the rest soon.

I made a seeded watermelon, baby banana, key lime, fresh ginger, sea-moss powder, bladderwrack powder, and spring water smoothie for brunch. However, I felt hungry after brunch and went to Just Salad and Sweetgreens on Thursday and Friday. On Thursday at Just Salad, I had a customized vegan wrap with Beyond Chicken, romaine lettuce, quinoa, avocado, crispy onions, sliced carrots, vegan feta, and sesame ginger. At Sweetgreen, I ordered a customized Hummus Crunch Salad made with chopped romaine, shredded kale, basil, cucumber, red onion, shredded cabbage, tomato, za'atar breadcrumbs, chickpeas, olives, hummus, portobello mushrooms, and spicy cashew dressing. I also ordered three servings of hummus and focaccia, splitting them into two servings, and ate that for Friday and Saturday brunch in addition to the watermelon smoothie. Since eating at Mr. Beast last Friday, I've been craving anything with bread and eating significantly more food from last week.

On my last day for the second week, I had my smoothie for brunch and the creamy mushroom soup with homemade hummus and spelt crackers. Even though I had a lot more food that wasn’t Dr. Sebi approved this week, I didn’t fall off the wagon. I prefer to order food because it is convenient. However my homemade food tastes better, but cooking at home is time-consuming, and I’m pressed for time. I need to find ways to make quick meals from home. For future visits to Just Salad or Sweetgreen, I will make a better effort to make bowls using ingredients from Dr. Sebi's list. By the way, my eating out cost me $45, and I could have got a week of groceries if I just made everything from home.
